It's because of how young she was and she didn't have all of the magic as she does now as an adult. As for the green hair I have no idea what you are talking about. See, recently I've come up with a theory that originally, Celestia and Luna were supposed to be fillies when the whole Nightmare Moon thing went down - but that S2's redesign of Luna, and S4's flashbacks, retconned that away.
The reason I think this is because S1 Luna looks like the Luna in the pilot's "picture book" opening, and Faust once said pre-S2, I think that she saw Luna as not being fully grown yet, but that when she was an adult she wouldn't look the same as Nightmare Moon.
So maybe the idea was that Luna's aging was frozen during her moon trip while Celestia kept aging. That would make pink mane Celestia how she looked as a filly. Faust also said she imagined that when the Nightmare Moon thing went down, Celestia and Luna were living together in the Everfree castle, possibly with their parents.
Living with their parents That might maybe mean they weren't adults yet, but it's not really conclusive. Celstia's hair has a mostly green base. Which can be shown in equestria's flag, however in books and stained glass the show shows celestia's mane with a pink based color. When was Celestia's pink mane made canon? I have never seen a legitimate screenshot from the show showing it.

I absolutely HATE this notion of toys for boys and toys for girls. When I gave the gift to her, she unwrapped it and was as happy as a bunny but after 5 minutes she didnt understand why is the toy pink, when it should be white! Those Bratz doll are ridiculously blown out of proportion, even more so than barbie. It is important that the child does not believe she must look like them, but it is good that she is playing, creating stories. They just need to be fun and look less creepy. Also, the Princess Luna toy is pretty bad.
She has become purple when in the show she is dark blue, and she comes with hair clips and huge tiaras while in the show she wears a simple black comb.
I think my daughter saw this in a toy store and she had no interest in it because it was pink not white. Monster High is a lot better in its depth and messaging, though their appearance is still sexualized. We use Common Sense Media a lot to guide us through the tangled maze of kids media.
I meant to add prior to posting that comment that the Barbie movies have really impressed me with their messaging. None of them except one focuses at all on appearance, and all focus on messages about character and strength, being yourself etc. I especially liked The Three Musketeers, in which she saves the prince, and then rides away to go do more heroic deeds instead of settling down with him.
